BANANA OAT PROTEIN COOKIES
These breakfast cookies are light, filling and delicious! They’re packed with plant protein and bananas which will keep you feeling full and energized!
In a large mixing bowl, combine:
2.5 cups of gluten-free oats – I used Bob’s Red Mill brand
1/2 cup of dairy-free milk – I used oat milk (add more if you need it based on how many bananas you use)
4-5 large ripe bananas, MASHED
3 scoops of vanilla vegan Shakeology (or substitute with a vanilla vegan protein powder)
1/2 tsp of baking soda
a pinch of sea salt
Mix well until all of the oats, bananas and plant-milk have absorbed together. Grease baking sheet with coconut oil or use parchment paper. Scoop large spoonfuls onto baking sheet.
Bake at 350 degrees for 15-20 minutes. Let cool before eating as the banana will be hot.
Enjoy these in the morning for breakfast or as a healthy snack any time!
