BLUEBERRY LEMON BREAD

We whipped this up last night and it was DELICIOUS! This is easily taking it’s place as one of my new favorites. Enjoy this bread for breakfast or any time you want a yummy snack!

Pre-heat oven to 375 degrees Fahrenheit

Ingredients:

  • 2 cups of oat flour (I ground up old fashioned rolled oats in my food processor to turn it into a flour)

  • 1/2 cup of unsweetened shredded coconut

  • 3/4 tsp baking soda

  • 1/2 tsp salt

  • 3/4 cup of raw cane sugar

  • 3/4 cup of oat milk

  • 1/2 cup of unsweetened apple sauce

  • 1/4 cup of fresh lemon juice 

  • zest of 2 lemons

  • 1 cup of blueberries (fresh or frozen)

Grease a bread pan with coconut oil or vegan butter. Pour batter into pan. Bake for 45-50 minutes at 375. It is done when the top is a light golden brown color. I also test it with a toothpick in the center to be sure that the toothpick slides out clean.

Allow to cool for 10 minutes before serving.  Top with fresh fruit or enjoy it by itself. It’s so moist and amazing!
