VEGAN BAKED APPLE CRUMBLE
I remember it was in the second grade that I first fell in love with apples… I was walking through an enchanted orchard in the country side and noticed the bright red… just kidding!
Here's the recipe:
Ingredients
For the Apple Mixture:
4 cups apples, sliced (I used about 8 medium sized apples total)
3 tbsp. pure maple syrup
1 tsp. ground cinnamon
1 tsp. pumpkin pie spice
1 dash of clove and 1 dash of nutmeg (optional – use just a sprinkle – it goes a long way – too much will be overpowering)
pinch of sea salt
For the Oat Crumble Topping
1.5 cups of old fashioned oats
1-2 tbsp maple syrup
1 tsp. cinnamon
2 tbsp melted vegan butter
1/4 cup of chopped walnuts or pecans (optional) I have a nut allergy so did not use them
Instructions
Preheat oven to 375° F.
Combine apples, maple syrup, and spices in medium baking dish; mix well. Set aside.
Combine oats, maple syrup, vegan butter, cinnamon and nuts in a medium bowl; mix well.
Top apple mixture with oat mixture. Bake for 25 to 30 minutes or until apples are soft.
Super easy to make and so delicious. For a really healthy version, go lighter on the maple syrup and omit the vegan butter. These are so good!!
