VEGAN PUMPKIN MUFFINS

{Makes 12 Muffins}. I could only eat one- they’re that filling!

RECIPE:

  • 3 cups old fashioned oats (I used gluten free)

  • 1.5 cups of organic pumpkin purée (this equals 1 can)

  • 3 tbsp. Sunflower Seed Butter, 1/4 cup pure maple syrup

  • 1.5 cups water

  • 2 tsp flax seed

  • 3 tsp cinnamon

  • 3 tsp allspice or pumpkin pie spice

  • sprinkle of sea salt

HOW TO:

Preheat oven to 375. Mix all ingredients in a bowl, grease muffin tin with coconut oil, scoop batter into each muffin tin- fill it to the top because these won’t rise! I topped with a banana slice and sprinkle of cinnamon. Bake for 20-25 mins.

These are so filling and so GOOD!!! Enjoy!

These are so good, I can’t wait to whip up another batch. This time I might add chocolate chips, more banana slices, or cranberries! Keep your pumpkin treats healthy and your mind and body will thank you.
