VEGAN HALLOWEEN CUPCAKES

These spooky vegan bat cupcakes will put a smile on your face!

INGREDIENTS:

  • 1 box of Duncan Hines Vanilla Cake Mix

  • 1 coconut yogurt

  • 1 cup of oat milk

sERIOUSLY, THAT’S IT.

Yes, you read that right. Most box cake mixes are vegan prior to adding the extra ingredients.  Neat!

The cupcakes came out FLUFFY AND DELISH! Make sure to *cool completely* before removing from the cupcake tin and frosting.

For the frosting:

  • 3 cups Powdered Sugar

  • 4 Tbsp Vegan Butter

  • 2-4 Tbsp Oat Milk

  • 1 tsp Vanilla Extract

To save time, you can also buy the store frosting in the container pre-made, as most of the Betty Crocker and Duncan Hines frostings are vegan.

For the Bats:

  • Oreo Cookies

  • Sugar Eyes

  • Use icing to stick them to the cookies

Take one Oreo cookie and using icing, stick some sugar eyes to it. We found the eyes in the baking aisle of the store. Take a second Oreo and pull it apart using the plain cookie for the wings. Break it in half and place the wings behind the bat face into the icing to hold it.

Chill cupcakes again in the fridge and they will really hold together well.
