VEGAN HOLIDAY NOG

I make this delicious vegan version of egg nog for Christmas wanted to share it with you!  

Ingredients:

  • 1/2 avocado

  • 1 large ripe frozen banana (peel ripe bananas ahead of time and break into 1 inch chunks, freeze over night – I always keep a bin of frozen bananas in my freezer for smoothies)

  • 1 cup of rice milk or coconut milk

  • 1 tsp of lemon juice (about 1/4 of a fresh lemon squeezed)

  • 1/2 cup of pure maple syrup

  • 1/3 tsp. nutmeg

  • 1/4 tsp. cinnamon

  • 1/8 tsp. cloves

  • 1 tsp. vanilla extract

Extras: cinnamon stick for garnish, crushed candy canes/mints for rim of glass

Blend ingredients together in your blender and serve!  You can also pour into a pitcher and chill in the freezer, or serve over ice.  Pour into your favorite glass, or National Lampoon’s moose glass and serve.
